These pumpkin spice almonds are really so simple to make. Toss almonds with maple syrup, olive oil, and pumpkin pie spice, and then bake them - that’s it! I love how they make my kitchen smell. Almonds: Use raw, whole almonds.
Oil: I like to use extra-virgin olive oil, as I did for my masala roasted nuts. You can easily switch it with coconut oil or avocado oil.
Pumpkin pie spice: This is really easy to make. Combine cinnamon powder, ginger powder, ground cloves, and freshly grated nutmeg in a small bowl. You can also use store-bought pumpkin pie spice.
Salt: I prefer sea salt or even Himalayan pink salt because they are so much more flavorful and add a lot more oomph to the almonds. But regular table salt works just as well.Â
Maple syrup: For a touch of sweetness. You can use honey or agave syrup instead.

How To Make Pumpkin Pie Spice Roasted Almonds
Step 1: Preheat your oven to 160 C / 320 F and line a baking tray with parchment paper.
Step 2: Combine the almonds, maple syrup, olive oil, pumpkin spice, and salt in a bowl and mix well until all almonds are nicely coated.
Step 3: Spread out the almonds on the prepared tray evenly.
Step 4: Bake at 160 C / 320 F for 15-20 minutes, stirring the almonds every 5 minutes, until lightly browned and toasted.
Step 5: Take the tray out of the oven and let the nuts cool completely. Transfer to airtight jars.

- For evenly toasted almonds, toss them around on the baking sheet every 5-6 minutes while they bake.
