Recipe Ingredients

Ingredients for making pumpkin spiced almonds in small bowls.

Almonds: Use raw, whole almonds.

Oil: I like to use extra-virgin olive oil, as I did for my masala roasted nuts. You can easily switch it with coconut oil or avocado oil.

Pumpkin pie spice: This is really easy to make. Combine cinnamon powder, ginger powder, ground cloves, and freshly grated nutmeg in a small bowl. You can also use store-bought pumpkin pie spice.

Salt: I prefer sea salt or even Himalayan pink salt because they are so much more flavorful and add a lot more oomph to the almonds. But regular table salt works just as well.

Maple syrup: For a touch of sweetness. You can use honey or agave syrup instead.

Recipe FAQs

How do I know when the almonds are done?

The almonds will smell fragrant, and the skin will turn a shade darker. This usually happens around the 15-20 minute mark.

Can I make these maple glazed almonds without an oven?

Yes, you can roast them in a skillet instead. Use a non-stick or cast-iron skillet over low heat and stir frequently.

How can I use leftover pumpkin pie spice?

You can use it in a lot of dishes. Stir some in your coffee, sprinkle it over a warm bowl of oatmeal, or add it to your pancakes. It also works well in recipes like pumpkin pancakes, pumpkin Basque cheesecake, pumpkin snickerdoodle cookies, and pumpkin banana bread.

Why aren't my pumpkin spice almonds crunchy after storing?

This can happen if you store them while they are still warm. Let them cool completely before transferring to an airtight jar.

Can I use a different nut?

Yes, pecans, peanuts, walnuts, hazelnuts, and cashews all work well. Keep in mind the roasting time will differ for each of them.
