These easy coconut almond rose bliss balls are naturally sweet, delicately floral, no-bake treats. Quick to make and lovely for everyday snacking, gifting, or festive celebrations.
Soak the pitted dates in hot water for 5-10 minutes to soften them up. Drain and set aside. Save the water for later use.15 Dates
Add all the ingredients - desiccated coconut, dates, almonds, dried rose petals, flax seeds, and rose water to a blender or food processor. Blend till everything is smooth and sticky. Taste and adjust for sweetness. For extra sweetness, you can add some honey/maple syrup/ agave syrup to the "dough".1 cup Desiccated coconut, 3/4 cup Almonds, 15 Dates,1 Tbsp Dried Rose Petals, 1.5 Tbsp Flax seeds,1.5 tsp Rose water
Roll the dough into equal-sized balls. Coat them with pistachios and/or a mixture of coconut and beetroot powder. Enjoy!These need to be stored in the refrigerator in an airtight container.2 Tbsp Desiccated coconut mixed with beetroot powder, 2 Tbsp Finely chopped pistachio

Dates need to be pitted and soaked in hot water for 5 to 10 minutes to soften them. Don’t throw the date water. If your coconut-almond bliss ball dough feels too crumbly, add it to get the consistency right. It’ll help bind the mix.
Use whole almonds (no soaking, blanching, or peeling necessary) or almond meal or flour.
If the bliss ball dough is overly sticky or wet, add flaxseed powder, almond meal, or almond flour to it.
If your blender is not strong enough to pulse all the ingredients together, powder the almonds before you throw in the rest of the ingredients for the bliss balls.
Adjust the rose flavor to your taste. Rose water can vary in strength, so start with the recommended amount and add more if needed.
Chill the mixture before rolling if it feels sticky.
Coating the bliss balls is completely optional. I used finely chopped pistachios and desiccated coconut mixed with beetroot powder. You can use finely chopped almonds, shredded coconut, or even dip them in chocolate as I did for my chickpea protein balls.
