Recipe Ingredients

Dates: The natural sweetener and the ingredient that binds these coconut almond bliss balls. They will need to be pitted and soaked in hot water for 10 to 15 minutes to soften them.
Almonds: For texture and richness. You can also use almond meal or almond flour.
Desiccated coconut: Also adds light sweetness and texture, and a delicious coconut flavor. This is easily available online and in grocery stores. Get the unsweetened version.
Flax seeds: For nuttiness.
Rose water and Dried rose petals: For a beautiful rose flavor. These are also easily available online. You can use them in strawberry rose chia pudding, rose pistachio cookies, rose tres leches, and rose shortbread cookies.

How To Make Coconut Almond Bliss Balls
Step 1: Soak the dates in hot water for 5-10 minutes to soften them up. Drain and set aside. Save the water.
Step 2: Blend your soaked dates (without the water), almonds, desiccated coconut, flax seeds, and rose water in your food processor or blender till you have a smooth, sticky dough-like consistency.

Step 2: Taste test. If you like sweeter almond bliss balls, add a few drops of your sweetener of choice (maple, agave, or honey). I didn't add any sweetener.

Step 3: Shape the bliss balls into equal-sized balls and then roll them in a mixture of coconut and beetroot powder and finely chopped pistachios.

Step 4: Serve the coconut-almond balls.

- Dates need to be pitted and soaked in hot water for 5 to 10 minutes to soften them. Don’t throw the date water. If your coconut-almond bliss ball dough feels too crumbly, add it to get the consistency right. It’ll help bind the mix.Â
- Use whole almonds (no soaking, blanching, or peeling necessary) or almond meal or flour.
- If the bliss ball dough is overly sticky or wet, add flaxseed powder, almond meal, or almond flour to it.
- If your blender is not strong enough to pulse all the ingredients together, powder the almonds before you throw in the rest of the ingredients for the bliss balls.
- Adjust the rose flavor to your taste. Rose water can vary in strength, so start with the recommended amount and add more if needed.
- Chill the mixture before rolling if it feels sticky.
- Coating the bliss balls is completely optional. I used finely chopped pistachios and desiccated coconut mixed with beetroot powder. You can use finely chopped almonds, shredded coconut, or even dip them in chocolate as I did for my chickpea protein balls.
How To Store
Store these vegan bliss balls in an airtight box in the refrigerator for up to a week.
You can also freeze the uncoated bliss balls for up to 1 month. Place them in an airtight container, separating layers with parchment paper if needed. Thaw in the refrigerator.

- 1 cup Desiccated coconut
- 3/4 cup Almonds
- 15 Dates
- 1 Tbsp Dried Rose Petals
- 1.5 Tbsp Flax seeds
- 1.5 tsp Rose water
- 2 Tbsp Desiccated coconut mixed with beetroot powder Optional, for coating
- 2 Tbsp Finely chopped pistachio Optional, for coating
Instructions
