How To Make Blueberry And Lemon Bread

Step 1: Preheat the oven and grease an 8"x 4" loaf pan. Whisk together flour, baking powder, and salt in a large bowl.

Step 2: Rub the lemon zest into the sugar. Keep aside.

Step 3: Whisk together the lemon-sugar, eggs, oil, lemon juice, and milk in a large bowl.

  • 1.5 cups All-purpose flour
  • 2 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 cup Sugar
  • 1 tbsp Lemon zest
  • 2 Eggs

Instructions
 

  • Preheat the oven to 180 c / 350 f. Grease an 8" x 4" loaf pan.
  • Whisk together flour, baking powder, and salt in a large bowl.
    1.5 cups(190 g) All-purpose flour, 2 tsp Baking powder, 1/4 tsp Salt
  • Rub sugar and lemon zest in a small bowl with your fingertips. Keep aside.
    1/2 cup (100g) Sugar, 1 tbsp Lemon zest
  • Whisk together eggs, milk, oil, lemon juice, and lemon sugar in a bowl.
    2 Eggs, 1/2 cup (120 ml) Milk, 1/2 cup ( 100 ml) Vegetable oil, 1.5 tbsp Lemon juice
  • Pour the wet ingredients over the dry ingredients and mix well.
  • Toss blueberries with 1 teaspoon of flour and fold into the cake batter.
    1.5 cups ( 200 g) Blueberries, 1 tsp All-purpose flour
  • Transfer the batter into the prepared pan. Sprinkle the top with sugar.
    1 tbsp Sugar
  • Bake at 180 c/ 350 f for 50-60 minutes or until a skewer inserted in the center comes out clean.
  • Allow the loaf to cool in the pan for 15-20 minutes before turning it out on a cooling rack.
  • Let the loaf cool completely, then slice and serve. Enjoy!
